A word from the cook
Homy apple bread (cake) with toasted hazelnuts will make your tea time heavenly cozy.

For the Apple bread:
- 2 cups flour
- 1 cup sour cream
- 1 cup sugar
- 2 eggs
- 2 big spoons molasses
- 1 sachet vanilla sugar
- 1 teaspoon backing powder
- 1/2 teaspoon baking soda
- pinch of salt
- 1 cup homemade apple jam
- 1 cup of hazelnuts lightly toasted and crushed

For the home made apple jam:
- 1kg apples (cored and cut in cubes)
- 300gm sugar

For the glaze:
- 1/2 cup butter
- 1 cup powdered sugar
- 2 tablespoons dark honey (or molasses)
- 1 sachet vanilla sugar
- 1/4 cup condensed milk


1) Preheat the oven to 170C.

2) With an electric mixer whisk sour cream, sugar, molasses and vanilla sugar till well combined. Whisk in the eggs.

3) Sift the flour, baking powder, baking soda and salt into the mixture and fold in. Add the apple jam and hazelnuts by folding in too.

4) Place in a greased or silicon loaf tin (i prefer lining my tins with baking parchment, but it is not a must) and bake for about 40 minutes.

5) Cool for about 10 minutes place cake on a wire rack. When completely cooled drizzle the glaze on top.

6) To make the glaze: with an electric mixer whip butter until pale and fluffy add the rest of the ingredients and whisk until smooth.

7) To make the apple jam: place the apple cubs in a pan with sugar and bring to the boil. Cover with a lid and leave to simmer for 30-40 minutes, stirring each now and then. Transfer to any airtight jars to cool. Once cooled, cover and chill in the fridge where it will thicken and become more jam-like.
