There are many recipes of Carrot cakes. Yet this one earned a special place in my heart for its softness, given by Cashew nuts
Ingredients

For the carrot cake:
- 450-500gm carrots, grated
- 200gm light soft brown sugar
- 320gm flour
- 150ml oil
- 3 eggs
- 150gm cashew nuts, ground
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon

For the glaze:
- 1 cup powdered sugar
- 2 tablespoons sour cream
- 2 tablespoons clear honey
